Brown rice, tomato and basil salad...



















Rice is really good for you so this may be the most simple recipe you could prepare! It takes minimal effort and great to cook by itself whilst you have a little break and a cup of tea!

RECIPE: Super brown rice salad tossed with tomato and fresh basil for a summer fragrence

Servings: Makes 6 servings.

You will need:

2 1/4 cups water
1 cup long-grain brown rice
2 tablespoons Champagne vinegar or white wine vinegar
2 tablespoons olive oil
1 pound tomatoes,
fresh basil leaves

Preparation

1. Bring 2 1/4 cups water to boil in heavy medium saucepan

2. Mix in rice and salt. Cover, reduce heat to low and simmer until rice is tender and water is absorbed, about 40 minutes. Transfer rice to large bowl; fluff with fork and cool

3. Whisk vinegar in small bowl

4. Gradually whisk in oil and pour over rice

5. Add tomatoes and basil and toss to combine

6. Season with salt and pepper

Can be eaten hot or cold now how simple was that!
