King Prawn and Mango skewers




















King Prawns are wonderful for presentation, they are pink taste great and look good what better ingriedient they are also really healthy for you!

RECIPE: King Prawn and Mango skewers with a lime and garlic dressing

Servings: Makes 6 servings.

You will need:

3 tablespoons olive oil
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
1 teaspoon dried crushed red pepper
18 King prawns
2 red bell peppers, each cut into 12 pieces
2 firm but ripe mangoes, peeled, pitted, each cut into 12 wedges
12-inch bamboo skewers or twelve soaked in water 30 minutes,

To make...

1. Pre-pare grill (medium-high heat)

2. Mix first 4 ingredients in large bowl

3. Add prawns, bell peppers and mangoes,toss to coat

4. Alternate bell pepper, mango and 3 colossal shrimp on each of 6 skewers, or alternate bell pepper, mango and 3 jumbo prawns on each of 12 skewers
5. Grill prawns until warmed through, brushing with glaze during last 2 minutes...
6. To dress add garlic -lime and seasoning with a tablespoon of olive oil and glaze over the skewers.

You will end up with a simply divine skewer that you may eat hot or cold!
